It helps the consumer know how "big", how much area the stone takes up to give the millimeter instead. If you tell the customer the carat weight of a sapphire they will expect the sapphire to be the same millimeter as a diamond of the same weight and will be disappointed because it is smaller than the diamond of the same weight.
